Well There's A Rose...

The really is no such thing as 9 to 5 anymore. Especially in the film business, the work has a tendency to expand to fill the time allowed...and then some. More often than not, the bulk of the week is spent not with family and friends but with co-workers. So in the spirit of Valentines Day, I'm sending my husband to work tomorrow bearing Red Velvet Cupcakes.

"If you can't be with the one you love honey, love the one you're with."


I'd never made Red Velvet before and after much research decided to try this recipe from Pinch My Salt, with a few substitutions.

I had gel food coloring on hand, not liquid, so instead of making a paste I sifted the cocoa powder in with the other dry ingredients. Then I mixed the gel food coloring into the wet ingredients before adding the dry. No buttermilk either so I substituted regular milk mixed with a teaspoon of vinegar. Instead of cream cheese I went with a basic vanilla buttercream.

I love the texture of the these cupcakes, very airy and light. And the taste just makes my heart go pitter-pat.

No Tricks Please

Dear Neighborhood Kids,
I regret to inform you that I will be unable to provide treats for you this Halloween. Perhaps your parents have explained to you the state of our economy at the present time. While all of you little ghosts and goblins are off going door to door this Friday night I will be at work, and as I will be losing my job in just 3 weeks it is imperative that I do so. Please accept these Chocolate Nutella Cupcakes in lieu of Halloween candy. And please refrain from egging my house.

There was a lot of talk (and a lot of math) on the P&Q about the dryness issue of these cupcakes. I added 1 tsp of espresso to the batter, under baked them by about 4 minutes, and then piped in some nutella.


They were not overly most but they were dense and soft and I loved the glaze on top. I was on a tight schedule and had to forgo my grand decorating plans and stuck to a variety of Halloween sprinkles I had laying around.

Eat Your Vegetables


Mmm, chocolaty, gooey, yummy...zucchini? Yep that's right, say goodbye to "You should've had a V8" and hello to chocolate zucchini cupcakes! Made with fresh organic zucchini from a friend's garden, unsweetened applesauce, and whole wheat flour these babies are chock full of nutrition. Why, they are practically health food! And your mom always said, "no dessert until you finish your vegetables!"
Chocolate Zucchini Cupcakes
Adapted from recipes on Straight From The Farm & and Chocolate and Zucchini
3 cups grated zucchini
1 1/2 cups all purpose flour
1/2 cup whole wheat flour
1 3/4 cup sugar
3/4 cup unsweetened cocoa powder
2 tsp baking soda
1 tsp baking powder
dash of salt
1/2 tsp cinnamon
1/4 tsp freshly grated nutmeg
4 eggs
3/4 cup canola oil
3/4 cup unsweetened applesauce

Preheat oven to 350. Grate zucchini and squeeze out excess moisture. Whisk together dry ingredients. Add eggs, oil and applesauce and mix well. Fold in zucchini. Fill muffin cups 3/4 full and bake for approx. 25 minutes. Cool before icing.

Coffee Buttercream
Adapted from Cupcakes by Susannah Blake
1/2 cup butter, softened
3 1/2 cup powdered sugar
3 tsp brewed coffee cooled
1 tsp vanilla extract
2 oz semi sweet chocolate

Cream butter, then add powdered sugar and vanilla and beat on medium until combined. Alternate gradually adding remaining powdered sugar and coffee until achieving desired consistency and flavor. Pipe onto cooled cupcakes. Garnish with grated chocolate

Pink Buttercream Is The New Black


In case you hadn't noticed- cupcakes are taking over the world. Sprinkles, Magnolia, Crumbs Bakery have reached celebrity status, often using famous names and faces to hype & hawk their wares and achieve world domination over all baked goods! Now I'm sure everyone says this but I really have been a cupcake devotee for ages- you know, before they were cool, and I'm not easily taken in by fancy icing and the trappings of Hollywood mystique.
